PANCETTA PHOTOS

Here are a few shots of the pancetta that I finished about a month ago.  I was my first time and I feel the results were fantastic.  I've made carbonara, bucatini al'amatriciana, risotto, etc...It's substantially better then anything I've bought at a store....There are a ton of recipes and variations online, enjoy!

The Beginning

Well, here it goes....I have no experience writing anything and have an attention span of a three year old, but I'm for whatever reason really excited to start this.  Is it just a new obsession to add to my eclectic bag "hobbies"?  I'm not really sure to be honest.  My dabbling in photography led to a pretty successful wedding photography/portrait business, so who knows.  What I hope to achieve here is to compile a fairly comprehensive collection of meat curing projects, as well as a post a few other tidbits that I have interest in and enjoy doing.  I look forward to many posts going forward.
